Easy Peasy Chocolate Chip Cookies

Danny, Christian and I went to a Pastor's conference on Tuesday. When we got home this afternoon, I didn't have a ton of time to prepare a treat for a potluck we were going to go, so I whipped up a batch of these "cheater's cookies". They were a major hit...in fact we didn't bring any home, and EVERYONE loved them. Please allow me to share my secret...



Ingredients:
1 (18.25 ounce) package chocolate or yellow cake mix
1/2 cup vegetable oil
2 large eggs (I only had one, so I used egg substitute in these cookies)
1 cup semisweet chocolate chips
1/2 cup chopped pecans (totally optional - I NEVER put nuts in my cookies - YUCK)

Beat first 3 ingredients at medium speed with electric mixer until batter is smooth. Stir in chocolate chips. Drop by heaping teaspoonfuls onto ungreased baking sheets. (Preheat the oven to 350 degrees BEFORE starting this process...it took forever for my oven to heat up...too much time to eat cookie dough.)

Bake for 8-10 minutes. Let sit on baking sheets for a few minutes before removing and placing on wire racks to cool.
You can modify this recipe with different flavored chips / cake mixes based up on your mood. These are so quick and easy it is almost a sin. (This recipe is from "cake mix miracles")
