Valentine's Day in the Kitchen

My parents were so kind as to pay me a visit at the end of last week and stayed through Valentine's Day. Oh how I love those two, let me count the ways! My mom is enormously helpful with Mr. Toddler (aka "Banshee Boy). I was able to have a date with my handsome hubby (we had PF Chang's -can you say YUM?!- and watched AVATAR - A-MA-ZING).

On Saturday, I made the decision that we all needed a little Valentine's day treat, and what says "Happy Valentine's Day" more than bite sized pieces of chocolate? I knew exactly what I was going to do...channel Bakerella for her recipe for Cake Balls and put my own spin on them. How many ways can you say "Delicious"?!

I made them with a cake mix, as I have found that though I may have a better recipe for Red Velvet Cake than a box can provide, I just didn't have enough red food coloring to get the result I wanted! I did make my own cream cheese frosting though, and used a dark (Ghiradelli) chocolate to dip them in. Mmmm...dark chocolate...{Insert Homer gurgle here}
Here is half of the fabulous treat so that you can see the lovely colors. Notice the plate...SO worth the price! Don't worry, I know this little fella looks lonely, but he didn't sit there too long. ;-) Hope you all had a great Valentine's day!
