What's for Dessert...Kahlua Cinnamon Brownies

I made these brownies last week for my in-laws and EVERYONE raved. I only told those that are watching their waistlines that it was a Cooking Light recipe. :-) They were so delicious in fact, that when I needed a little chocolate pick-me-up this week I whipped up another batch. The picture above is of the last two brownies.

Ingredients

1/4 cup semisweet chocolate chips (I used Ghiradelli chips)
1/4 cup stick margarine or butter
1/4 cup Kahlua (coffee flavored liqueur) {if you have access to a BevMo, they sell little taster bottles that are PERFECT for this sort of recipe. One bottle is 1/4 cup exactly, and I didn't have to buy/invest in an entire bottle.)
2 teaspoons vanilla extract
3/4 cup flour
3/4 teaspoon baking powder
1/4 cup unsweetened cocoa (I used Scharffen Berger)
1 teaspoon cinnamon
1/4 teaspoon salt
1/2 cup plus 2 tablespoons packed brown sugar
1 large egg
cooking spray
1 teaspoon granulated sugar

Directions
1. Preheat oven to 350 degrees. Prepare 8" square baking pan by spraying with cooking spray and set aside.
2. Combine chocolate chips and margarine in small saucepan over medium-low heat and cook just until chocolate melts. Remove from heat and stir in Kahlua and vanilla.
3. Combine flour and next 4 ingredients in a medium bowl (I sifted them together).
4. Beat brown sugar and egg on low speed of a mixer until blended. Add melted chocolate mixture; mix well. Add flour mixture, beating until smooth. Pour batter into prepared pan and cook for 25 minutes. Remove from oven and sprinkle with granulated sugar. Cool in pan completely. Yield 16 servings (I took this part as a suggestion ;-)

By the way, I always add a few chocolate chips to my brownie batter...so I did that with these and it made them even BETTER! I hope you agree!
