A Summer Favorite - No-Bake Cookies





As anyone who has lived in the warmer regions of Southern California (i.e. the I.E.!) during the summer knows, you just DON'T turn on the oven between the months of June thru September. So what is a gal to do when she is having an "I need chocolaty deliciousness NOW" moment? Well, she pulls out a pan and cooks up a quick batch of these cookies. I know what you are saying: "Cooks?! How can cooked cookies satisfy my cravings?!" Trust me, these cookies don't last long. I enjoyed them every summer growing up, and strive to continue the tradition with my kiddos. :-) Are you ready for the recipe? Have I got you interested yet? OK, here it is:







No Bake Cookies (from the "Jungle Camp Cookbook")


Nothing you won't already have in your pantry/fridge...so you can make them ANYTIME!



Boil together for 5 minutes (soft ball stage)

  • 2 cups sugar
  • 5-8 tablespoons cocoa
  • 1/3 to 1/2 cup shortening or margarine
  • 1/2 cup milk
  • 1 teaspoon salt


Remove from heat and add (quickly)

  • 3 cups oatmeal
  • 1 1/2 teaspoons vanilla
  • nuts (optional...you will NEVER find nuts in cookies I eat!)


Drop by tablespoons onto waxed paper to cook or spread on a cookie sheet to harden. (Note: they do harden quickly, so work fast...plus you will want to rush so that you can clean the pan!)
I highly recommend using a candy thermometer for the boiling stage, to ensure that the batch cooks properly. Otherwise, you will have a bunch of mush to spoon up (if under-cooked) or you will break a tooth (it happened to me) if overcooked.
