Williams Sonoma Gingerbread Sleigh

One of my projects this year was to make a Williams Sonoma Gingerbread Sleigh for my handsome hubby.  I have only done this a time or two, as it is quite a lengthy and involved process.  However, when he asked for it with his dimpled smile and charming ways, how could I refuse?!



I start with this box.  It has the instructions, the cutters, and most importantly the best recipe for gingerbread cookies I've ever made.



After the dough was separated into four parts and chilled for 24 hours, I got to work.  While the oven preheated I let one part of dough rest for 10 minutes before rolling it out.  I then cut all of the parts out and placed on a parchment lined cookie sheet.  (Note: parchment paper might be slightly costly, but it is WORTH IT...it saves you from having cookies burnt on and stuck to a cookie sheet, wasted and tossed in the trash.) 



Once baked, I decorated with royal icing and melted chocolate.  Next year I will make extra legs...I broke quite a few while making the reindeer.  The cookie is moist and slightly soft, which makes it yummy, but also challenging when building this creation.

I love the smell of freshly baked gingerbread, it smells like Christmas!
