Creole Poached Chicken with Couscous

This was dinner tonight:


Poached Creole Chicken on a bed of couscous.  Can you say YUM?  My newest favorite cookbook, The Weight Watchers Complete Cookbook, has not let me down.  Super yummy dinner, super easy and super filling.  5 points total (including couscous).

Basically you throw together onions, celery, carrots and bell peppers into a pan with some olive oil and saute until soft.  Then you pour in crushed tomatoes, thyme, parsley, cayenne and chicken broth and poach chicken breasts in the liquid.  It is THAT easy.

This was so healthy and low calorie / fat that I decided that some homemade italian bread would go perfect with it.  Oh, and don't forget the extra yummy olive oil to dip it in.  Oh yeah, that's how we do it around here.

(After writing this post twice because the power went out mid post, I have begun to salivate and might need to have another bite or two of the leftovers.)
